Vegan Jackfruit Tacos

Instructions

Step 1. Start by making the authentic pico de gallo as it needs to sit and absorb all the flavors before serving. Finely chop your onion and jalapeño. Combine them together with lime and salt and let them sit on the side, while finely chopping the tomatoes, and coriander. A rule more finely chopped = more flavor in each bite applies here. When the tomatoes and coriander are ready, mix them together with the rest & let the mixture sit when preparing Jack. 

Step 2. Preheat the oven to 180 celsius. Place unfrozen jackfruit chunks into a *steaming pot and steam it for around 10 minutes - till soft. When ready, shred/pull chunks (preferably with your hands) into small pieces reminiscent of “pulled” meat. 

Step 3. In a bowl, mix oil (of your choice) with the ready taco seasoning (or find a recipe for home-made taco seasoning here).

Step 4. Add pulled jackfruit into the bowl and coat it with a prepared mix of oil and taco mix spices. When ready, place the jack on a baking tray and bake it for about 10 - 15 minutes. The more you bake it, the crunchier it becomes. 

Step 5. Create your tacos: put a spoonful of pico de gallo on a taco tortilla and top it up with Mexican style jackfruit. Drizzle it with lime juice and serve.

Jack's Tip

* if you don’t have a steaming pot: Place a smaller pot into a bigger one filled with boiling water and cover it.
