Vegan Nachos with Salsa & Cheesy Jackfruit

Instructions

Step 1. Ok, first thing first. Defrost your Naked Jack.

Step 2. When you’re ready to go, start by heating up the oven at 180 °C.

Step 3. Prepare the jackfruit. Start by coating the jackfruit chunks with nutritional yeast, garlic powder, and olive oil, massaging them with your hands for the best effect. Take an oven tray, cover it with the parchment paper, and spread the jackfruit chunks evenly across the tray. Then, when the oven is ready, put the tray in and roast the jackfruit for 20-25 minutes. 

Step 4. Now that the jackfruit is in the oven, it's time to make the sauce. Take finely chopped spring onions, jalapeños slices, and tomatoes and add them, along with a pinch of salt, to your favorite yogurt. Are you using something other than Greek yogurt? Then make sure you choose a vegan yogurt with a thick structure. 

Step 5. You're almost there. Mash the avocado and flavor it with salt and pepper. 

Step 6. This one is optional. But if you are looking for the fully-loaded nachos experience, then when the jackfruit chunks are done, turn off the oven and place the nachos in it for a few minutes.

Step 7. Now for the fun part. Pile everything up like an artist. Start by covering the serving dish with a layer of nachos, then gradually add bits of jackfruit, sauce, mashed avocado, chopped jalapeños‍, tomatoes, and more nachos. Try and get as many layers as you have the patience for. 

Jack’s Tip: You can always replace the mashed avocado with your own homemade guacamole. Enrich your yogurt with your favorite spices and ingredients. Or replace yogurt sauce with tomato salsa and sprinkle with cilantro. 

In any case, when you’re done remember that these nachos are made to share!
