Step 1. Boil the jackfruit until tender following the instruction in the package. Drain and shred it into small pieces.
Step 2. Saute shallot, garlic, and ginger in the hot oil until fragrant.
Step 3. Add shiitake mushroom, saute until soft then add soy sauce and sesame oil. Mix well.
Step 4. Add jackfruit and tofu then add salt and pepper to your taste.
Step 5. Add spring onion and mix well.
Step 6. Let it cool, then wrap into individual loempia envelopes.
Step 7. Lay a spring roll wrapper and place the mixture on one corner. Roll to completely enclose filling, folding in sides. Brush edge of the wrapper with water and seal. Repeat with remaining mixture and wrapper.
Step 8. Heat oil in a pan. Deep-fry spring rolls in batches, turning occasionally until golden and crisp. Serve hot with sweet chili sauce.
