Vegan Jackfruit Gyros Wrap

Step 1. Prepare your tzatziki. Grate half of the cucumber into a bowl. Squeeze the excess juice from the grated cucumber. Add half of the pack of plant-based yogurt and mix well. Add 3 cloves of garlic through the garlic press. Finely chop fresh dill and add it to the yogurt mixture along with the juice of half lemon. Season with salt. 

Step 2. For the inside of our wrap chop cucumber, tomatoes and red onion into small pieces. Mix them together and get a fine almost salad-like mixture. On the side chop lettuce of your choice into small pieces as well. 

Step 3. Unpack the jackfruit heaven and place it into the frying pan. There is no need of using any oil on the pan as the jackfruit is seasoned with Greek herbs and oil. Move jackfruit around on the frying pan and try to break slightly bigger pieces into smaller ones. There is no need for such a move if you don’t feel like it, but it might be easier to roll your wrap with smaller pieces. 

Step 4. Build up your wrap - At first place and spread tzatziki to the middle of your wrap. Add salad, fresh vegetables mix and top it up with warm jackfruit. 

Step 5. Roll into a wrap and enjoy!
