Pita Jackfruit Gyros with Tzatziki

Instructions

Step 1. Prepare your homemade tzatziki. Mix the cucumber, garlic, and dill with the yogurt of your choice. Taste it and, if needed, season it with some pepper and salt. 

Tip: If you are not using regular Greek yogurt, then we recommend you use a vegan yogurt with a thick texture.

Step 2. Heat up the jackfruit gyros. Place the jackfruit in the frying pan and heat it up on a low fire until it’s warm enough. Jack is already seasoned in Greek spices and oils, so there is no need to add any oil to the pan.

Step 3. Bake the pita breads. While you slowly heat the gyros, preheat the oven to 180 °C and place the pita breads in the oven. Bake them for a few minutes until crispy and yet soft enough. Find your sweet spot. 

Step 4. Now the fun part. Fill each pita bread with jackfruit gyros, add tzatziki, and sprinkle it with some parsley and finely chopped red pepper. Enjoy!
