Jackfruit burgers and meatballs

Two new jackfruit products are cooking in Jack’s kitchen. The recipes are ready, first batch is in the freezer, but we are not quite ready to take them into production just yet.

So, we took our first ambitious batch and packed it into Magic Box bags, available on weekly basis in Too Good To Go app.

You can pick up the deep frozen bags in Amsterdam or Haarlem. Look for ‘Meet Jack’ in the app to see date, time, and location details.

Jackfruit Burgers

Ingredients

Jackfruit, sweet potato, potato, lupine, herbs & spices (MUSTARD), breadcrumbs (GLUTEN) (WHEAT (GLUTEN), BARLEY (GLUTEN), leeks, dried garlic, salt, natural flavors, smoked bell pepper, water, glucose syrup, hydrolyzed corn protein, hydrolyzed protein (SOY), sugar, antioxidants (E300), food acid (E330), preservative (E211), garlic extract, union, sunflower oil, vinegar, corn protein, seaweed, wheat flour (GLUTEN), WHEAT bran (GLUTEN), yeast, margarine, MALT extract (GLUTEN) (BARLEY (GLUTEN)).

Allergens

Gluten, soy, celery, mustard, lupines.

Shelf life

Can be used till July 2022 when kept at -18 degrees. Once defrosted, use within 2 days.

Preparation tip

Defrost jackfruit burgers to room temperature. Add a bit of oil to the pan and fry the burgers till golden brown on both sides.

Jackfruit Meatballs

Ingredients

37% jackfruit, water, breadcrumbs (WHEAT flour, water, yeast, salt, colorant: E100, onion), chickpea flour, sunflower oil, vegetable proteins (fava bean protein, pea protein), spice extract, herbs and spices, sea salt, natural aroma, tomato pieces (tomato, glucose syrup, maltodextrin, corn starch), thickener: E461, potato starch, vinegar, garlic.

Allergens

Gluten.

Shelf life

Can be used till July 2022 when kept at -18 degrees. Once defrosted, use within 2 days.

Preparation tip

Defrost jackfruit meatballs to room temperature. Add a bit of oil to the pan and fry the meatballs with constant shaking or flipping till golden brown on all sides.

Jackfruit Bapao

Ingredients

WHEAT flour, water, sugar, rapeseed oil, yeast, 14% jackfruit, coconut milk, potato starch, onion, Ketjap Manis (molasses, water, natural fermented SOY sauce (SOYbeans, salt, caramel, natural aroma)), modified potato starch, fried onions (onion, palm oil, WHEAT flour, salt), sambal (Spanish pepper, carrot, water, salt, vinegar, aroma), garlic, salt, chillies, SOY sauce (water, SOYbeans, salt, sugar, WHEAT flour (GLUTEN), mushroom extract), coriander seed, lemon leaf, nutmeg, ginger, laos, white pepper, turmeric, sereh, bay leaf, Chlorella sorokiniana.

Steam for 2 to 3 minutes in a microwave or in a steam basket.
